Superbowl Snackeroos

I may not know shit about football, but I do know TASTY!! So, yesterday while the Patriots and the Lakers were playing, I was in the kitchen cookin up these SWEET POTATO CHIPS  - super simple, and yummier (+healthier) than a bagged potato chip.

YOU WILL NEED :
2 medium sized sweet potatos
Garlic Powder (to tastse)
Kosher Salt (to taste)
Mandolin or a SHARP knife and a steady hand
3 cups vegetable oil

1. PREP - Slice potatoes, and lay paper towel on an empty plate (for drying and seasoning after frying)
2.Heat vegetable oil on medium-high in a skillet until bubbles appear around a wooden spoon when inserted (lil trick I learned at the cordon bleu)
3. Drop sliced potato pieces into oil, frying about 1 minute on each side (until they begin to crisp and brown)
4. Using a slotted spoon, remove from oil and place on paper towel.
5. Season immediately with salt and garlic powder (or your favorite seasoning)
6. EAT EM!!

See? Simple and deeeeelish! These are great for a party or a casual weekend afternoon, even the boys will like em (read -Mario ate them all)  so grab a beer and get down!!!
