What's for Dinner - Pork Quesadillas

On the menu tonight are these deeeelish Pork Quesadillas. For me, ultimate comfort food is always Mexican. I dont know why -I am in NO way Mexican, unless theres something I dont know- but if I could choose my last meal, It would hands down be fresh steak or chicken fajitas!

*** BEST MEXICAN IVE EVER HAD - LOS MARIACHIS on Mcleoad Trail, right here in Calgary. KILLER Fajitas, Handfried Nachos, and the margaritas will make you fall right over  :)***


YOU WILL NEED:
1 package Ground Pork (or whatever meat you choose)
1/2 package fajita/taco seasoning (or whatver seasoning/flavours you like eg- BBQ sauce)
1 red pepper
1 onion
1 1/2 cups Shredded Cheddar or Monteray Jack cheese
1 jar of Salsa (as much as you like)
Package of Tortillas (I like plain ol white ones - but you can get corn tortillas, or use boston lettuce to be uber healthy)
*optional - guacamole and sour cream for dipping

THESE ARE SOOOOO EASY - HERE WE GO!
PREHEAT oven at 375

1.Skillet on Medium/High heat - Begin browning Pork, Adding 1/2 the Seasoning mix.
2. Dice Onion and  Red pepper, add to skillet, cook for additional 2 minutes until pork is cooked through and veggies start to soften.
3. Add 1/2 the salsa to the skillet. Cook 1 minute more
4. Spoon and spread mixture evenly onto one HALF of a tortilla
5. Top with cheese - folding the other half over top to create a Semi circle shape.
6. Bake in oven for 10 minutes, flipping once.

7. Slice, Serve and dip!!! YUMMERS
