What's for Dinner - Pork Quesadillas

On the menu tonight are these deeeelish Pork Quesadillas. For me, ultimate comfort food is always Mexican. I dont know why -I am in NO way Mexican, unless theres something I dont know- but if I could choose my last meal, It would hands down be fresh steak or chicken fajitas!

*** BEST MEXICAN IVE EVER HAD - LOS MARIACHIS on Mcleoad Trail, right here in Calgary. KILLER Fajitas, Handfried Nachos, and the margaritas will make you fall right over  :)***


YOU WILL NEED:
1 package Ground Pork (or whatever meat you choose)
1/2 package fajita/taco seasoning (or whatver seasoning/flavours you like eg- BBQ sauce)
1 red pepper
1 onion
1 1/2 cups Shredded Cheddar or Monteray Jack cheese
1 jar of Salsa (as much as you like)
Package of Tortillas (I like plain ol white ones - but you can get corn tortillas, or use boston lettuce to be uber healthy)
*optional - guacamole and sour cream for dipping

THESE ARE SOOOOO EASY - HERE WE GO!
PREHEAT oven at 375

1.Skillet on Medium/High heat - Begin browning Pork, Adding 1/2 the Seasoning mix.
2. Dice Onion and  Red pepper, add to skillet, cook for additional 2 minutes until pork is cooked through and veggies start to soften.
3. Add 1/2 the salsa to the skillet. Cook 1 minute more
4. Spoon and spread mixture evenly onto one HALF of a tortilla
5. Top with cheese - folding the other half over top to create a Semi circle shape.
6. Bake in oven for 10 minutes, flipping once.

7. Slice, Serve and dip!!! YUMMERS

Mint jeans - a few ways

I love the colored denim trend SO much - Blue jeans are always classic, but can get snoozy. This trend is still comfortable enough for weekend wear, and if you do it right, stylish enough for an dressier occasion. 
Last season I grabbed a pair from H&M for about $30 (Bluenotes has a killer selection right now). In the Summer, the mint is fun with other brights and neutrals   BUT I love them just as much in Winter... it feels fresh and frosty with knits, greys, blacks and whites

 **Stick to neutrals / ONE other bright with bright jeans to avoid looking, umm, crazy. 
An additional color works best if they are COMPLEMENTARY* 

eg. green+magenta, blue+orange, violet+yellow

**Im all about cuffing my jeans right now, as long as they arent TOO tight, it brings ease and personality to an outfit*


Here they are a few different ways for some inspo, but I ended up wearing them with a white tank and cream cashmere wrap for a cozy, comfortable and wintery daytime look.

*EASY* Caramelized Chicken & Zuchini Fries

My man arrived home from Dallas hungover, sleepy, and surprise surprise - HUNGRY!
After a hasty sandwich and a long nap, he will no doubt be hungry again, so heres whats for dinner tonight!

Caramelized Baked Chicken & Zucchini Fries!
 Prep: 5 mins Cook: 30ish mins

When I first started cooking, I found it toughest to TIME parts of a meal to be ready together - the key is to take a few minutes and plan, and know when to ask for help. This one's easy - I've timed it perfectly for you!! The best part of this recipe is its QUICK and all the ingredients are in your Pantry!! Just grab fresh zucchinis and defrost some chicken!



Ready? Preheat the oven to 375



YOU WILL NEED:
2 Chicken breasts cut in half LENGTHWISE - so they are thinner *I do this when half frozen to make it easy*(You could use wings or thighs too)  
3/4 Cup Honey
1/4 cup Soy sauce
3 generous squirts of ketchup
tbsp cornstarch slurry (cornstarch mixed with a dash of water)
1 dash of hot sauce/chilli sauce
 A pinch of Salt and Pepper
1 chopped clove of garlic

For the fries:
2 tablespoons of butter
2 medium sized zucchinis
1 1/2 cups breadcrumbs
1 cup Parmagiano Reggiano Cheese
Pinch of Salt and Pepper
* a palmful of any other seasoning you like eg: chilli flakes, italian seasoning, steak spice


1. Combine honey, soy, ketchup, chilli sauce, chopped garlic, slurry and S&P in a bowl and whisk together until well combined. *Taste it, its amaazing*
2. Pour over the chicken in a baking dish and slide it in the oven for 10 mins (to start)

**While the chicken starts cooking, were going to prep zuchini fries and make rice**



3. Cut ends off zucchinis. Chop them in half and then into finger sized sticks
4. Heat butter in a shallow bowl 
5. Combine seasonings, breadcrumbs and cheese in another shallow bowl.
6. Toss zucchini sticks in butter and then in the breadcrumb mixture 
7. Place fries on baking sheet 
8. Begin cooking rice to package directions (I use the instant packages of rice, easy and tasty)

9. *if its been 10 mins* Crank the oven to 425 and slide the fries in (baste & flip chicken) 
10. Bake for 15 minutes, turning fries, stirring rice and basting chicken once

 Fries are browned, and chicken has cooked through in its caramelized juices - Rice should be done now as well - That's perfect timing folks!! Live it, Learn it!

PLATE - Lay one or two pieces of chicken on a small bed of rice to one side of the plate. Pile some zucchini fries on the other side. Drizzle a little caramelized sauce over top. DONE!

Today was the day - unpack your closet Charly, Jesus!
So I did.. kind of.. well, maybe just dont go in the bedroom.


** I often come back to this idea of layering whatever grabs me ontop of a SIMPLE base outfit. It makes experimenting less daunting when you have something that works as a starting point.**
Try it yourself - start with something simple (Black tank dress and tights/ Jeans and white tee) and try a couple of different things on top until you have a winner.

This ended up being girlie up top and badass down low - sort of an outift mullet! I love the juxtaposition of opposites - tough vs girlie, loose vs tight, prim vs boho etc.
